Ingredients

  • 200 g roasted sweet potato
  • 400 ml coconut milk
  • 200 g dark chocolate (min 70 %)
  • 1 tsp vainilla extract
  • 1 tsp sea salt

Method

  1. Peel and mash sweet potatoes.
  2. Melt the chocolate either in the microwave or in a large heatproof bowl suspended over a pan of simmering water (but not touching the water) making sure – either way – you remove it from the heat before it is completely melted.
  3. Add the rest of the ingredients to the chocolate mixture and process with mashed sweet potatoes in food processor or high speed blender.
  4. Pour the chocolate mousse into your ramenkins or cups and refrigate all night.
  5. To get the right texture, soft and satiny, take out to come to room tempearute for 10 min before eating.
