A combination of sweet and sour and peppery spiciness worth making.
Ingredients
- 3 mangoes (about 1 kg) cut into small cubes
- 75 g fresh ginger (peeled and grated)
- 2 garlic (minced)
- ½ tsp salt
- ½ tsp cayenne or chili poder
- 250 ml white vinegar
- 150 g muscovado sugar
- 50 g almonds (slivered and toasted)
- 50 g raisins
Method
- Put all ingredients together in a pan and simmer over very low heat for about 20 minutes. Cool before putting in a jar.
