A combination of sweet and sour and peppery spiciness worth making.

Ingredients

  • 3 mangoes (about 1 kg) cut into small cubes
  • 75 g fresh ginger (peeled and grated)
  • 2 garlic (minced)
  • ½ tsp salt
  • ½ tsp cayenne or chili poder
  • 250 ml white vinegar
  • 150 g muscovado sugar
  • 50 g almonds (slivered and toasted)
  • 50 g raisins

Method

  1. Put all ingredients together in a pan and simmer over very low heat for about 20 minutes. Cool before putting in a jar.
