Hot pot is more an experience than it is a dish. You not only share a table and a meal with people but you’re cooking your food together in a shared pot.
Chinese hot pot is one of the most popular meals in China. It consists of a simmering metal pot with broth at the center of a table, and all raw ingredients placed beside the metal pot, so people can add and cook whatever they like in the broth.
The list of ingredients that can be cooked in a hot pot is a long one. The most important thing here is the variety of ingredients and the right selection of them can help you find the balance in this dish. Green vegetable, fresh pasta, mushrooms, beef, fish balls and seafood are our favourite.
If you are not an expert yet in a hot pot experience and you want to try as much as possible, ask your server about a split pot and try two totally different combinations of broth, meats, noodles, and vegetables to find out what you like the most.
Also, do not add all ingredients to the broth at once. First add the items that take longest to cook first, like fish balls and meatballs, and then add the thinly sliced meats or green vegetables.

Wase is a little place hidden in the heart of Usera – chinese district in Madrid. The owners of the restaurant are extremely kind and helpful so feel free to ask about any doubt you have.
At the beggining of the hot pot experience you can choose between a ceramic roof tile pan or a regular grill where you will be frying your ingredients before adding them to the broth.
We took the grill option and a medium spicy broth with different kinds of meat, vegetables, tofu and fish balls. We fell in love with the broth, it was reallyy flavoured and everything we put there tasted just right.
The prices are very affordable and we will definitely come back!
