Easy friend. When in doubt – roasted peppers.

Add something crunchy and toasted. Add favourite herbs, vinegar and a good salt.

Ingredients:

  • 3 red peppers
  • 4 garlic (thinly sliced)
  • 100 ml extra virgin olive oil
  • 4 tbsp vinegar (use your favourite kind)
  • kosher salt
  • black pepper
  • fresh rosemary (to garnish)
  • toasted almonds (to garnish)

Method

  1. For roasting and peeling peppers, follow these instructions and cut them into ribbons.
  2. In a serving bowl mix the olive oil, vinegar, garlic, salt and blac pepper. Add roasted peppers and mix well.
  3. Leave marinating in a fridge for at least 1 h.
  4. Serve garnished with fresh rosemary and toasted almonds.
